As I was doing my usual browsing, I stumbled upon Pook's (what a cute name huh?) blogsite. Immediate reaction was wow...cool pictures and with clear & neat step-by-step instructions too!! Great for novice bakers like me.I tagged many of her recipes, waiting for an opportunity to try them. Finally decided on scotch shortbread since DH hasn't been feeling well lately and confined to plain bread. Was hoping that these will brighten his day as I noticed that he tends to buy these type of biscuits.
As I was whipping up the mixture, M came over to see what I was up to since I haven't been using my mixer for sometime now. When I said shortbread, her eye's immediately lighted up and said "Yum, my favourite!". Is that so....?? Never knew - she said that she doesn't buy them much now because we don't eat them much. I'm sure these homemade scotch shortbread will pull me over quickly. Best tip I can recommend is to use the best butter you can get your hands on. I know, I know the price of butter has increased tremendously over the past few months but if you want quality - must PAY lor! Ha ha
The baked dough was very soft when it came out of the oven. Must confess that I was a little worried that it wouldn't harden when it cooled down. But my premature fears were put to rest as time passed.
Side note - Sprinkle a little more sugar on the top (M said that I was being too stingy - hard to please-la, sometimes put too much complain too sweet, not enuf also got something to say!! Hmph....ha ha). Well the 'real' thing has lots of sugar sprinkled on top and also don't forget the holes for the must-authentic look!!
