Chicken patties

Just love these little gems. Lovely eaten as is or dipped with chilli sauce. In fact, I have a confession to make, while M fries these babies, especially if I catch whiff their aroma floating from the kitchen, I normally pinch a few grab handfuls and end up quite stuffed before dinner time. So to cover any obvious big holes/gaps, my mum would usually ensure she makes a big batch or garnish the plate with cucumber!


Can use chicken or pork mince seasoned and then dipped in egg mixture before frying them.

As a variation, M decided to added some diced ham for the extra flavour.

Personally, while I do agree that the ham enhances the flavour, I am happy with the 'plain' mince patties - simple and yet tasty. Afterall once you dip it with sauce, makes no big difference *IMHO*.

Side note - Instead of 'extra' ham, add lots of chopped corriander, much more fragrant and tastier.

Home-cooked chicken rice

This was M's attempt at chicken rice, minus the claypot. Would have been just fantastic if it was cooked over hot charcoals. I just love those cruchy bits that get stuck to the bottom of the claypot.

Nevermind, this chicken rice tasted lovely anyway, as always, the special secret ingredient being L-O-V-E! *Unlike the Kung-fu Panda story where the 'secret ingredient' is....nothing, ABSOLUTELY NOTHING!!*

Placed cooked the meat and mushroom over steamed rice and cover until ready to serve.

Quickly get everyone ready for dinner.

Stir in the chicken mix quickly and evenly.

Mix well to ensure all the rice are evenly coated and flavoured.

Finally....a plate full of mum's love, yummy till the last grain. Thanks M!!

P.S. Pity the Tefal pot didn't allow the rice to burn at the bottom. :)

Chilli beans

...a.k.a. chilli con carne.


Great way to consume red kidney beans by spicing it up.

Best eaten with tacco shells, tortilla chips or rice. Otherwise, any bread will do.

Served with some finely chopped lettuce makes this a very freshing meal.
