
This is a simple dinner bun, great served slightly warmed and slathered with good quality butter!!
I didn't realize that there were 'orange' and 'yellow' coloured filling sweet potatoes. A friend of mine told me that the yellow ones tasted better. I believed her and bought a bag.
Recipe adapted
(Yields 9 mini buns)
125g mashed sweet potato (microwave 2 min and then baked in oven until soft, about 30 min, mash while still warm and set aside)
133g water
245g bread flour
15g milk powder
1/2 tsp salt
15g dark brown sugar
1/2 tsp instant yeast
1/4 tsp nutmeg
1/2 tsp ground
18g butter, room temperature
Rolled oats for topping
- Mix all ingredients together and knead until dough is pliable, about 10-15 min.
- Rest covered dough in a warm area for 60 min.
- Knock back dough gently and divide into small balls, about 50g.
- Rest for 10 min before folding into a small tight ball.
- Place in a greased tin or parchment paper.

- Glaze buns with some milk and sprinkle oats over the top.
- Proof dough in a warm area for 1 - 1.5 hours until double in size.
- Bake in pre-heated oven for 30-35 min until golden brown.
