I love munching on grissini especially sipping a glass of wine!! So I've been itching to make some. Especially since my last attempt was a disaster - it turned out to be more of a soft roll rather than a crispy breadstick. I mean DH ate it slathered with butter!!! *sigh*

I think my final outcome was a combination between the recipe by Grace and Pook.
Adapted recipe used
120g Bread flour
40g Plain flour
12g sugar
1/4 tsp salt
80g water
2 pinches of instant yeast
25g freshly grated Parmesan cheese
15g butter, room temperature (add last)
sesame seeds - white and/or black for decorations (optional). Can also use poppy seeds.
- Knead all the ingredients (except the the butter) for 5 min.
- Add in butter and continue to knead until you get a smooth and pliable dough.
- Cover and rest in room temperature for 50 min.
Roll the dough out flat. Spray a little water and sprinkle sesame seeds and press down gently to ensure seeds stick to dough.

Use a pizza cutter or a knife, cut dough into stripes, about 1cm wide.

- Taking a piece of dough, twist it and place it onto prepared baking tray.
Bake in pre-heated oven @ 150 degrees for about 15-20 min or until golden brown.

The sticks were super delicious, fragrant and crunchy warm out of the oven. Unfortunately it didn't stay that way even though I re-baked it the next day. Surprisingly, the ones I rolled really thin and without seeds for Master Prince stayed crunchy.
The fresh Parmesan cheese added a wonderful flavour to them. Great snack for a party!
