Glaze Sesame Almonds


Saw this posted at tastespotting here. Not only did her picture look so beautiful, the recipe was also pretty easy.

Since I was cracking my brains for xmas gifts for DH's friends whom we are visiting during xmas, I thought they would make a good gift.

It is also my first time roasting almonds this way. They tasted good, not too spicy, salty or sweet!!! I'd guess they taste nicer than plain roasted almonds and still healthy too.

Adapted recipe

175g caster sugar
175g water
500g whole unblanched almonds
25g sesame seeds
6g fine sea salt
1/4 tsp cayenne pepper
1/4 tsp sweet paprika
1/4 tsp ginger powder
pinch nutmeg
  1. Boil sugar and water, stirring until sugar has dissolved. Boil for 5 min.
  2. Remove from heat and stir in almond.
  3. Leave almond in sugar mix for about 5 min, stirring often.
  4. Drain sugar mix, leaving almonds in a bowl.
  5. Toss in sesame seeds and spices. Combine everything evenly.
  6. Spread evenly on foil. Bake at 170 degrees for 20 min.
  7. Continue to bake at 90 degrees for further 25 min or until the nuts are crispy. You will have to taste it and stop baking until you are satisfied with its crunchiness.
  8. Cool and store in air tight container.

Bench notes - I had to bake the almonds much longer than the time stated in the recipe to achieve the crunchiness desired.
