It's DOUBLE cookie recipe galore today!! lolz
Yes you can really taste the flavour of the shrimps!A good change from the usual 'sweet' cookies. :)
Ingredients (Recipe adapted from Yum-Yum books)
200g butter
80g icing sugar
1/4 tsp salt
2 cloves garlic, crushed
1 large egg
300g plain flour
1/4 tsp baking powder
1/4 tsp baking soda
20g grated parmesan cheese
10g curry powder
50g dried shrimp (chopped and fried in oiless wok)
10g deep fried crispy shallot

Method:
1. Cream butter, sugar and salt until light and fluffy.
2. Slowly beat in egg.
3. Fold in flour, baking powder and baking soda.
4. Stir in rest of ingredients into a soft dough.
5. Roll into small balls and arrange on lined baking tray.
6. Flatten lightly with a mallet (usually used to tenderise meat).

7. Bake in preheated oven at 180C degrees for 12-15 min or until light golden brown.
8. Cool before storing into airtight jars.

Bentobird & Annie, if you like hei-be (or fried dried shrimp in cantonese) you'll definitely like this.
New cookies for me but they look so tasty! Usually only use dried shrimp for cooking. You bring it to another level :)
