Playing with Pumpkin

Going 'Orange' for the week.

If you had 1 kg of roasted pumpkin puree, what would you do? Any ideas???

Not too sure? Well stick around and I'll proffer some suggestions though I must admit I was scratching my head too!!

Butternut pumpkin is the best if you can get your hands on some as they are very tasty and sweet.

For this, I used a normal local pumpkin. Nothing fancy, just make sure it is ripe. Overheard M complaining how she had 2 pumpkins in the house and didn't have time to use them. Thought I declare an orange week and use them up!! Ha ha

For the roasted pumpkin puree, it is actually quite simple. The hardest thing is probably slicing the pumpkin!! :) A big cleaver is best for the job!

Cut pumpking and remove seeds. Arrange in a baking tray. Drizzle or brush some oil. You can use butter if you wish. Bake for 45-50 min @ 180C until the pumpking flesh is tender and soft. Using a fork, remove and mash the flesh together.
